Cochin Masala Chai
This tea is inspired by one of Indian's ancient city Cochin, now known as Kochi. Sometimes the city is referred as the Gateway of Southern India. One can imagine because of its diverse cultures in this city, Cochin subsequently became famous for a mixture of its own. Cochin Masala is a cooking staple in Southern India and is used to flavour curries of all sorts. Traditionally this chai would be brewed using milk instead of water. The same effect however, can be created by brewing your tea in the usual fashion and adding warm milk.
